Paellas & Cos brings the spirit of Spain to the Bay Area — where “co” means friends in Zaragoza, Spain.

 

Born from the shared passion of three friends from Spain living in the Bay Area: Diego Cruz Álvarez, José Granero, and Rubén Martín.

Originally from Zaragoza, Spain, Diego moved to San Francisco in 2005 to join the prestigious San Francisco Ballet, where he enjoyed a remarkable 19-year artistic career as a ballet dancer. Alongside his life on stage, Diego nurtured another deep passion; cooking. Preparing paellas for friends became a joyful ritual, a way to bring people together through flavor and friendship.

In 2017, that passion took shape as Paellas and Cos, a project that blends culinary artistry with the same dedication and creativity that Diego brought to dance. The name “Co” comes from Zaragoza slang “colega”, “amigo”, “compañero” meaning colleague, friend, companion. A perfect reflection of the spirit behind this venture.

In 2018 as life unfolded José Granero, principal clarinetist with the San Francisco Opera, and Rubén Martín, former principal dancer with the San Francisco Ballet had to returned to their artistic paths in music and dance, while Diego and his current team had continued to carry the essence and idea of Paellas and Cos forward, keeping alive the friendship and shared vision that inspired it.

Today, Paellas & Cos stands for quality, warmth, and memorable moments around the table. More than a catering service, it is an experience born from friendship, art, and a passion for bringing people together, whether on stage or around the paella pan.
